PRODUCTS:
 Campospillo, an organic certified farm, follows
in its productions the old example of the
farms on the hills: stock-farming, production
of olive-oil, wine, fruits and vegetables.
It tries in that way to keep safe the ecosystem
by mostly using fertilization of animal origin
and by maintaining the bio-variety of this
area.
FRUITS
AND VEGETABLES:
They mostly serve our guests’ and
our restaurant’s needs, which uses
in that way very fresh products, organically
cultivated and varied according to seasons. |
OIL:
The secular olive grove (variety of
Morellino and Correggiolo) produces
on the average 400-500 quintals of olives,
which are picked during the second half
of October and the first 15 days of
November. The olives are ground in the
farm’s oil-press the same day
when they are picked, with an average
production of 60-70 quintals of extra-virgin
olive-oil. This oil presents a harmonic
combination of organoleptic characteristics
(fruity, bitter, hot), very low bitterness
and small content of peroxide. |

 WINE:
Campospillo is located in an area of production
of Morellino of Scansano D.O.C.
About four hectares of modern vine grape,
which respect the production’s regulations
of Morellino (85% San Giovese, 15% Merlot
and Cabernet) and which produce 300 quintals
of grape on an average each year. These
grapes are worked in the old farm’s
wine vault by mostly using tuns of bay oak
of 42 quintals.
MORELLINO
2006:
The grape-harvest was moved up because of
the particular weather and it happened in
the second half of August: the bunches were
rich in sugar and perfectly healthy. The
wine appears with a intense and bright colour,
rich to the sense of smell and harmonic,
with fruity and spicy scent.
It tastes full, savoury and persistent.
All
the products (oil, wine, flesh, vegetables
and marmalades) are directly sold in the
farm. |
